Dairy-Free Green Beans and Onion Casserole

Yummy!  It can be difficult to find a dinner that will please everyone, especially a casserole. But green bean casserole is one of those dishes that can be easily transformed to fit everyone’s tastes, even those on a vegan or vegetarian diet. Ingredients: Creamy Soup 1 head cauliflower, chopped 1½ cup unsweetened almond milk or soy milk 2 tablespoon garlic powder 2 teaspoon Himalayan salt 1½ tablespoon onion powder ½ tablespoon freshly cracked black pepper 2 tablespoon coconut oil, or cooking oil of choice ½ medium-sized white or Spanish onion, finely chopped 2 garlic cloves, minced 16 ounces mushrooms, finely chopped Fried Onion Topping 2 large white or Spanish onions, thinly sliced 1½ cup soy milk Vegetable oil for frying (about 2-4 cups) 1½ cup flour 1 teaspoon dried sage 2 teaspoon Himalayan salt 1 teaspoon paprika, to season 1-pound fresh green beans, rinsed, trimmed, and halved Instructions: Soup and Fried Onions: Place chopped cauliflower in a large heavy-bottom pan with almond
